Cool off your summer afternoon break with cool mango salad. Simple ingredients for a nutritious salad.
Corn and Raw Mango Salad
1 cup corn kernels or corn on the cob
1 tbsp onions chopped
1 tbsp spring onions chopped
1 tbsp red bell peppers
1 tbsp raw mango diced
6 cherry tomatoes
1 tbsp pineapple diced
4 basil leaves
2 tsp lemon juice
1 tbsp olive oil
Black salt and white pepper to taste
- Blanch the corn in boiling salted water until tender.
- Drain, set aside and chill.
- Dice onions, spring onions, red bell peppers, raw mango and pineapple the same size as the corn.
- Cut the cherry tomatoes into half.
- Add basil to the vegetables.
- Season, add the lemon juice and olive oil and mix well.
